carrot cake sans guilt

Mmmm, carrot cake. You know you want some. Especially one that is healthy, and awesomely tasty.
Voila! That cake is here, courtesy of Tiffany at the NatureMoms blog. I just made it today, and I LOVE it.

2 c whole wheat flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
2 c grated carrots
1 c 1% milk
1 1/2 c applesauce
1 c maple syrup
1/2 c crushed walnuts

Preheat your oven to 350 (or 325 if you bake at altitude like me).
Mix your dry ingredients.
Add the rest of the ingredients, saving the walnuts until the end.
Pour into a greased 13x9x2 pan, and bake for 40 minutes. Let it cool.

Do you want frosting? Try this:
1 c nonfat plain Greek yogurt
1/2 c powdered sugar
1 tsp vanilla extract

Blend these ingredients together, and chill for 30 minutes before smothering on that awesome cake.

Beware: Your dogs will want some, too.
